Fazoli’s Returning to Gilbert: New Location Coming to 748 N Gilbert Rd

Gilbert is about to welcome back a familiar favorite. Fazoli’s, the fast-casual Italian chain known for its pasta, subs, pizza, and unlimited breadsticks, is officially moving into the building at 748 N Gilbert Rd, just south of Guadalupe Road.

This location has quite the history — and journey — before becoming the new home of Fazoli’s.

A Look Back at the Property’s History

The site originally operated as a Carl’s Jr., a recognizable stop for many longtime Gilbert residents. In 2016, the property sold for $1,375,000 to a group with plans to bring Slim Chickens to the area. That plan came to life, and Slim Chickens successfully opened at the site.

Later, the owners explored repurposing the building into a car wash, but those plans never moved forward. Eventually, the property changed hands again, selling in March 2025 for $1,800,000 as the vision for the corner continued to evolve.

Now, the next chapter is officially underway.

Fazoli’s: A Familiar Name Making a Comeback

Fazoli’s isn’t new to Gilbert. In the early 2000s, the brand had a location not far from the new site — right next to Wendy’s near Gilbert & Baseline. Many locals still remember their classic pasta dishes, fresh salads, pizza, and of course, those warm, unlimited breadsticks.

Their return to Gilbert has been highly anticipated, especially as the East Valley continues to grow and diversify its dining options.
