Sourdough & Co. Plans New Gilbert Location at Higley and Elliot

Gilbert sandwich lovers could soon have a new place to grab lunch near Morrison Ranch.

Sourdough & Co. has announced plans to open a new restaurant inside the Bashas’ shopping center at Higley and Elliot roads. The restaurant will take over the former Subway space at 139 S. Higley Road, Suite 101. Sourdough & Co.’s official website currently lists the Gilbert location as “coming soon,” although an opening date has not yet been announced.

What Is Sourdough & Co.?

Sourdough & Co. is a casual sandwich concept best known for serving deli-style sandwiches on freshly baked sourdough bread. The bread is served warm and paired with premium meats, artisan cheeses, fresh-cut vegetables and the restaurant’s signature house spread.

The company’s menu includes both traditional deli sandwiches and specialty creations. Customers can expect familiar options such as turkey, ham, roast beef and pastrami, along with specialty sandwiches including:

• Smoked Brisket

• Pastrami Reuben

• Caprese

• Chicken Cholula

• Cranberry Turkey

• Double Pesto Chicken

• Crispy Crunchy Chicken

The menu also offers fresh soups, gourmet salads, mac and cheese, kids’ meals, chips and cookies.

Customers can turn their sandwich into a larger meal by adding soup, salad or chips. Sourdough & Co. also provides catering for family gatherings, parties, special events and business lunches, with sandwiches, soups and salads prepared fresh to order.

Replacing the Former Subway

The new restaurant is planned for the space previously occupied by Subway inside the Bashas’ plaza near Morrison Ranch. Subway’s former restaurant listing used the same Building B2 and Suite 101 address now listed by Sourdough & Co., confirming the planned replacement.

The location should provide a convenient new lunch and dinner option for residents around Morrison Ranch, Lakeview Trails and the surrounding Higley and Elliot area.

Sourdough & Co. has not released an official Gilbert opening date yet, and its local page says the restaurant will begin accepting employment applications soon.
