Roll & Rise Bagels Opening First Gilbert Storefront
A popular local bagel business is preparing to make the jump from farmers markets to its first permanent storefront.
Roll & Rise Bagels will open its first brick-and-mortar location at SanTan Pavilions in Gilbert, taking over the former Strawberry Cake Shop space at 2524 S. SanTan Village Parkway.
The family-owned business was founded by husband-and-wife team Matt and Katie, who began their bagel journey in 2024 after nearly two decades in conventional careers. Katie brings culinary training from New York City, while Matt’s family previously operated a bagel shop. Together, they have built a loyal East Valley following through farmers markets, local retail partners and special orders.
Roll & Rise specializes in scratch-made sourdough bagels that undergo a three-day preparation process. Each bagel is hand-rolled, refrigerated overnight and then traditionally boiled before baking. The dough is made with high-protein flour, filtered water, local Arizona honey and kosher salt, with organic ingredients used whenever possible. The company also says it does not use seed oils in its bagels.
Until now, customers have primarily found Roll & Rise at Gilbert-area farmers markets and through local partners such as Honeybrook Farms. The new storefront will give the growing business a permanent home and make its bagels more accessible throughout the week.
The move also brings another locally owned food concept to SanTan Pavilions, located near SanTan Village in one of Gilbert’s busiest shopping and dining areas.
An official opening date and complete storefront menu have not yet been announced. More information is expected as construction and preparations move forward.
