A Sandwich Co. Coming to Verde at Cooley Station in Gilbert
A Sandwich Co. is planned for Verde at Cooley Station, taking over the former Cookie Co. space and bringing a fresh, casual dining option to one of Gilbert's fastest-growing mixed-use developments.
The new concept comes from local restaurateur Martin Hurtado, the owner behind several well-known East Valley restaurants, including Origen, BLU, and Urban Butcher. With a track record of creating popular dining destinations, expectations are high for his latest venture.
According to the concept, A Sandwich Co. will feature a menu centered around fresh-made sandwiches, soups, salads, and cookies, offering a variety of options for lunch, dinner, or a quick bite. While the full menu and opening date have not yet been announced, the concept is expected to provide guests with quality ingredients and a fresh, made-to-order experience.
Verde at Cooley Station has continued to attract new restaurants and retailers, making it one of Gilbert's newest dining and shopping destinations. The addition of A Sandwich Co. further expands the area's growing food scene and gives residents another locally owned option to enjoy.
