French Bakery Opens in Downtown Gilbert

Sablé Boulangerie officially opened its doors today at 8AM in Downtown Gilbert, and if you’ve been living under a rock, this is the new bakery everyone has been talking about. The new French bakery is located literally about 100 feet east of the Gilbert Water Tower in the Heritage District and is already drawing major crowds on opening week.

Created by Gilbert resident Will Porter, Sablé Boulangerie brings an authentic French bakery experience to the East Valley. Before opening his own shop, Will trained and worked in pastry kitchens in both France and Dubai before returning home to launch the concept in his hometown. His parents are also well known locally as the owners of Villa Siena, the popular event venue near Cooper and Elliot.

The bakery focuses on traditional French pastries and baked goods made with high quality ingredients, including 100% French flour and specialty French butter imported from Lyon. Guests can expect fresh croissants, pain au chocolat, artisan breads, pastries, coffee, and other rotating baked creations throughout the week.

The name “Sablé” is a French term often used to describe a rich buttery shortbread style pastry, while “Boulangerie” simply translates to “bakery.”

Opening day brought a steady line of customers excited to finally try the highly anticipated bakery after months of buzz online and around Gilbert. With its location steps from the Water Tower and Liberty Market area, many expect Sablé to quickly become one of Downtown Gilbert’s most popular morning spots.

Sablé Boulangerie is open Wednesday through Sunday from 8AM to 3PM.
