Coming Soon: Aftermath in Downtown Gilbert

by KEVIN MCKIERNAN

Downtown Gilbert is about to get a fresh infusion of energy and flavor as Aftermath Projects introduces its celebrated Modern American concept to Downtown Gilbert at 366 N. Gilbert Rd, previously home to “The Bar.”

This expansion promises an exciting trifecta: dinner service, weekend brunch, and a late-night cocktail lounge, blending the full spectrum of day-to-night offerings.

Designed by Arizona’s Own: Charles Barber Jr.

At the heart of this expansion is Charles Barber Jr., a fifth-generation Arizonan with deep roots in the Valley’s dining scene. He spent over 15 years at Zinc Bistro in Scottsdale before launching Aftermath in Phoenix in 2021, aiming to craft an approachable yet upscale neighborhood destination with standout food and hospitality.

Barber then rolled out his second brand, Born & Bred, reflecting pride in Arizona’s heritage. The first location opened in downtown Chandler in December 2023, followed by another in Scottsdale in early 2024.

A Flourishing Brand

  • Aftermath (Phoenix): The original restaurant, known for scratch-made dishes, local ingredients, and a lively cocktail program.

  • Born & Bred (Chandler): A casual, eclectic spot featuring beloved shareable plates, brunch, lunch, dinner, and private dining in a walkable downtown location.

  • Born & Bred (Scottsdale): A relaxed yet modern neighborhood spot that bridges bar cuisine and upscale dining, offering communal menus and refined fare.

Barber shares a clear vision: to expand with hospitality-forward restaurants built around community and quality. And Gilbert is next in line.
